What this estimate does and does not do

This calculator estimates honey weight, fruit gravity contribution, target original gravity, sweetness band, and ABV for mead or fruit mead planning. It is meant for recipe math before you mix a batch.

It does not replace a hydrometer, yeast datasheet, nutrient schedule, sanitation process, or safe bottling practice. Honey varies, fruit varies, and yeast performance depends on temperature, nutrients, pH, gravity, and alcohol tolerance.

Formula / method used

ABV is estimated with the common homebrew formula:

ABV ≈ (OG - FG) × 131.25

Therefore the target gravity drop is:

gravity drop = target ABV ÷ 131.25
target OG = expected FG + gravity drop

Gravity points are:

target points = (target OG - 1.000) × 1000

Fruit contribution is estimated from sugar content:

fruit sugar lb = fruit weight lb × sugar % × utilisation %
fruit points = fruit sugar lb × 46 ÷ batch gallons

Honey needed:

honey points = target points - fruit points
honey lb = honey points × batch gallons ÷ honey PPG

The default honey PPG is 35 points per pound per gallon.

Worked example

For a 5-gallon semi-sweet melomel aiming for 12% ABV and 1.010 FG:

gravity drop = 12 ÷ 131.25 = 0.0914
target OG = 1.010 + 0.0914 = 1.101
target points ≈ 101

If 6 lb fruit has 10% sugar and 80% utilisation:

fruit sugar = 6 × 10% × 80% = 0.48 lb sugar
fruit points = 0.48 × 46 ÷ 5 = 4.4 points

Honey supplies the rest:

honey points = 101 - 4.4 = 96.6
honey = 96.6 × 5 ÷ 35 = 13.8 lb

Assumptions and limitations

  • Honey is treated as a gravity source with user-entered PPG.
  • Fruit sugar is estimated from average sugar percentage and extraction.
  • Fruit also adds water, acids, tannins, nutrients, and volume displacement not fully modelled here.
  • ABV uses the simple 131.25 multiplier and can drift for high-gravity ferments.
  • Stabilisation, backsweetening, step-feeding, and nutrient additions are not calculated.
  • Confirm actual OG and FG with a calibrated hydrometer or corrected refractometer reading.
